BROILED SHRIMP WITH GARLIC 
3/4 c. butter
1/3 c. olive oil
2/3 c. chopped onions
1 1/2 tbsp. minced garlic
3 - 4 tbsp. lime juice
Pinch cayenne pepper
2 lbs. shelled shrimp
1/3 c. minced parsley
Salt

Preheat broiler to 550 degrees. Heat butter and olive oil together. Add onions and garlic and cook for about 5 minutes. Stir in lime juice, cayenne and shrimp. Continue stirring until shrimp are coated with butter mixture. Broil the shrimp for 5 to 7 minutes, basting once of twice. Toss with parsley. Salt to taste. Serve with rice or over pasta. Serves 6 to 8.
