STUFFED GREEN PEPPERS 
8 green peppers
1 c. uncooked rice
1 tbsp. shortening
1 lb. ground beef
1/2 c. chopped onion
1/2 c. chopped green pepper
1 1/2 tsp. salt
1/2 tsp. black pepper

Cut stem ends from peppers and remove seed. Put peppers into boiling water and cook for 2 to 3 minutes. Remove from water and drain.

Cook rice as directed on package. Melt shortening in heavy skillet. Add ground beef, onion, chopped pepper, salt and black pepper. Brown, then add to rice. Mix well. Stuff peppers with mixture. Place in baking dish and bake for 30 minutes at 350°F.
