EGGPLANT DRESSING 
1 lb. hamburger
2 med. onions, chopped
1/2 c. finely chopped celery
1 eggplant
1/2 loaf of bread, crumbled
1/2 tsp. poultry seasoning
1/2 tsp. sage
1/4 tsp. pepper
1 tsp. salt

Fry hamburger, onions, and celery. Boil eggplant for 20 minutes; cool. Cut into small pieces. Mix all ingredients in casserole. Bake at 350 degrees for 1 hour. Yields 8 servings.
