IMPOSSIBLE APPLE PIE | |
2 apples, peeled and sliced 3/4 tsp. ground cinnamon 1/2 c. granulated sugar or equiv. sugar substitute 1/4 c. baking mix 1/3 c. milk or water (use apple juice concentrate and can omit sugar) 1 egg or 2 egg whites 2 tbsp. melted butter (may omit to decrease fat) CRUMBLY TOPPING: 1 c. baking mix 1/2 c. chopped nuts or oatmeal 1/3 c. granulated or brown saucer or equiv. sugar substitute 3 tbsp. melted butter Preheat oven to 325 degrees. Grease a 9 inch pie plate. Peel apples, quarter and remove cores. Slice apples thinly into pie plate. Sprinkle apples with cinnamon. In a separate bowl, mix together sugar, baking mix, milk or water, egg and melted butter until smooth. Pour mixture over apples in pie plate. (Pie can be baked at this point without Crumbly Topping.) To make Crumbly Topping: Place baking mix, chopped nuts or oatmeal and sugar in a bowl. Melt butter and stir into mix until crumbly. Sprinkle topping evenly over pie. Bake pie until knife inserted in center comes out clean, about 50 to 6 minutes. Makes 6 to 8 servings. Note: This recipe can be doubled for a larger pie (do not double topping). Bake doubled recipe in a 10 x 1 1/2 inch pan or larger. Notes: See potpourri section for baking mix. |
