This was my mother-in-laws recipe she made during the depression. And has been passed down. It's fun and easy and the kids love them. They don't know that they are really eating meatloaf! 3 eggs, separated 1/2 lb. ground beef or turkey 1/2 tsp. baking soda 1/4 tsp. salt dash of pepper 1 tsp. lemon juice 1 tsp. parsley 1 tsp. grated onion Beat until light 3 egg yolks. Blend in the ground meat, baking soda, salt, pepper, lemon juice, parsley and onion. Fold in 3 stiffly beaten egg whites. Drop spoonfuls on hot, greased griddle when puffed and brown, turn and brown other side. Serve immediately with mushroom gravy, some green beans or peas.
