BROCCOLI CORNBREAD 
1 pkg. frozen chopped broccoli, thawed and drained
4 eggs
3/4 c. creamy lite cottage cheese
1 big onion, chopped fine
1 stick butter, melted or real soft
1 pkg. cornbread mix (I use 1 c. self-rising Three River Meal)

Mix butter, eggs, cottage cheese, and onion, then add Broccoli and mix again. Then add your cup of cornmeal. Spray a 10 inch skillet or you may lightly grease and pour your cornbread in skillet. Bake in 400 degree preheated oven. Bake for about 40 to 45 minutes or until toothpick comes out clean. Remove from oven. Let sit a few minutes, then slice like pie. Let sit another minute or two and it will sit up. It kind of reminds you of dressing. Remove with spatula. May reheat in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
