WALNUT RAISIN CAKE | |
2 c. chopped walnuts or pecans 1 (3 1/2 oz.) red cherries, cut up 2 c. light or dark raisins 1/2 c. fruit juice, orange or pineapple 3 sticks butter 2 c. sugar 1 tsp. vanilla flavor 6 eggs 3 1/2 c. sifted flour 1/2 tsp. salt 1 1/2 tsp. baking powder 1 tsp. nutmeg Preheat oven to 350 degrees. Grease and flour 10" tube pan combine nuts and cherries and raisins in large bowl with fruit juice, mix well, let stand for a few hours. Sift flour (all-purpose), baking powder, nutmeg and set aside. Cream butter and sugar until light and fluffy. Add eggs, 1 at a time, beating well after each. Beat in flour on low speed until smooth, mix batter into fruit; mix well. Pour into pan, bake 1 hour and 20 minutes. Cool 20 minutes in pan then turn out. |
