VEGETABLE RAGOUT 
Vegetable cooking spray
1 1/2 c. chopped onion
1 c. chopped green pepper
3 cloves garlic, minced
4 c. peeled & cubed eggplant (about 1 med.)
2 3/4 c. sliced squash (about 4 med.)
1 c. chopped tomato
1/2 c. chopped mushrooms
1/2 tsp. dried Italian seasoning
1/2 tsp. salt
1/4 tsp. pepper
1 c. sliced okra

Coat a large Dutch oven with cooking spray; place over medium-high heat until hot. Add onion, green pepper and garlic; saute about 3 minutes. Stir in eggplant and next 6 ingredients; cook 5-8 minutes, stirring often. Add okra; cook about 5 minutes, stirring often. Yield: 6 servings (66 calories per 1 cup serving).
