BRAISED LIVER AND VEGETABLES 
1 lb. beef liver
1/8 lb. bacon
1 sliced onion
1/4 c. diced celery
2 carrots, sliced
2 c. canned tomatoes
1/2 tsp. salt
1/8 tsp. pepper
2 tbsp. melted fat
1/2 bay leaf
1 1/2 tsp. flour

Cut liver in 2-inch square pieces. Dip in flour and fry until brown. Place in casserole dish. Brown onion, celery, carrots and bacon. Add to casserole. Add remaining ingredients and mix. Cover tightly and cook at 350 degrees for 1 1/2-2 hours. Serves 6.
