BLUEBERRY BARS | |
1 c. butter 1 c. sugar 1 tsp. vanilla 2 eggs 2 c. sifted flour 2 c. fresh blueberries (or chopped apples or raspberries) 1/2 c. sugar 1 egg 1/4 c. sugar 1/2 c. Angel Flake coconut or chopped nuts Cream butter and 1 cup sugar. Beat in vanilla and eggs. Add flour and mix well. (This is a very soft dough.) Press 1/2 of dough in greased 9x13 pan (use cold wet hands to press and spread). This is a very thin layer. Cover with berries. Sprinkle 1/2 cup sugar over berries. Spread rest of the dough over berries. (The easiest way to do this is to drop spoonfuls over berries and then again use wet hands to spread). Don't worry about covering all berries. Beat one egg until foamy and stir in 1/4 cup sugar. Spread on top of dough. Sprinkle with coconut or chopped nuts. Bake at 350 degrees for 40-50 minutes. NOTE: No baking powder or soda is used. |
