5 HOUR BEEF STEW 
1 1/2 lbs. beef stew meat (do not brown), cut into bite size pieces
6 med. potatoes, cut into bite size pieces
3 carrots, cut into bite size pieces
2 stalks celery, cut into bite size pieces
1 med. onion, cut into bite size pieces
46 oz. V-8 vegetable juice
3 tbsp. tapioca pudding

Mix V-8 juice, pudding, salt and pepper. Pour over meat and vegetables. Cover roasting pan. Bake 5 hours at 225 degrees.
