BUTTERMILK CHOCOLATE CAKE (NO
CHOLESTEROL)
 
1 2/3 c. flour
1 c. sugar
1/2 c. cocoa
2 tsp. vanilla
1 tsp. baking soda
1/2 tsp. salt
1 c. buttermilk
1/2 c. vegetable oil

Preheat oven to 350 degrees. Butter and lightly flour two 8-inch cake pans or one 9x13 inch pan.

Mix flour, sugar, cocoa, baking soda and salt in a bowl. Add buttermilk, vegetable oil, and vanilla, beating until smooth. Spread in pan or pans. Bake 20 to 25 minutes, 30-40 minutes in large pan. Test with toothpick. Cool in pan before turning out on a plate or rack.

NOTE: For diabetics cake, substitute 4 teaspoons of Sweet 'n Low for the 1 cup of sugar or 2 teaspoons of Sweet 'n Low and 1/2 cup of sugar.
