CHOCOLATE CHIP COFFEE CAKE | |
1 (10 inch) tube type cake pan 3/4 c. (1 1/2 sticks) soft butter 2 eggs 1 1/2 tsp. baking powder 1 1/2 c. buttermilk 1/2 c. golden raisins 1/2 c. finely chopped walnuts 2 tbsp. sugar 1 c. granulated sugar 2 c. all-purpose flour 3/4 tsp. baking soda 1 tsp. vanilla extract 1/2 c. semi-sweet chocolate chips 1 tsp. cinnamon 1. In large mixer bowl, cream butter and sugar. Blend in the eggs beating until fluffy. 2. In another bowl, mix flour, baking powder and soda. 3. Add flour mixture alternately with buttermilk to the creamed mixture, beginning and ending with the dry ingredients. Mix in vanilla, raisins and chocolate chips. 4. In a small bowl mix the nuts, 2 tablespoons sugar and cinnamon. 5. Butter a 10 inch (12 cup) tube type pan, dust with flour. 6. Pour 2/3 of the batter into the pan. Top with half the nut mixture. Pour in the remaining batter. Sprinkle with remaining nut mixture. 7. Bake at 350 degrees for 45 to 55 minutes until a toothpick inserted in the center comes out clean. 8. Cool in pan 10 minutes. Invert onto rack, serve warm. Serves 8 to 12. |
