CHICKEN O.J. 
1 stick of butter
1 chicken cut
2 tbsp. flour
1 1/2 c. orange juice
1/2 c. raisins
1/2 c. blanched almonds
1 c. mandarin oranges
2 pinches ginger and cinnamon

Melt one stick of butter in a Dutch oven. Lightly brown quartered sections of chicken on both sides and remove from butter. Reduce heat and blend in flour add orange juice and cook until thick. Add chicken, raisins, almonds, ginger and cinnamon. Cook covered 1 hour or until fork tender. Add mandarin oranges heat until warm do not boil orange slices. Serve on a bed of rice.
