VEGETABLE CASSEROLE 
1 lb. carrots, sliced & cooked
2 (10 oz.) pkgs. frozen broccoli
2 (10 oz.) pkgs. frozen cauliflower
1 1/2 stacks Ritz crackers, crushed
1/2 c. melted butter
2 c. cubed Velveeta cheese

Reserving some crumbs for topping. Mix remaining ingredients and place in casserole, top with remaining crumbs. Bake at 350 degrees for 20 to 30 minutes.
