APPLE COBBLER
2 c. flour
1 tsp. salt
1/2 to 2/3 c. shortening
6 tbsp. ice water
6 to 8 apples (McIntosh)
1 1/2 c. sugar
2 tbsp. flour
1/2 tsp. nutmeg

Sift the 2 cups flour and salt; add shortening (if it's lard, only use 1/2 cup; if vegetable shortening, use 2/3 cup). Mix up into size of split peas with 2 knives or pastry cutter. Add water slowly by teaspoons. Mix lightly until dough forms. Put layer of dough in bottom of bowl. Save enough dough to put on top.

In a pan, put apples, sugar, 2 tablespoons flour and nutmeg; cook and stir over medium heat until almost tender (7 to 10 minutes). Pour over dough in bowl. Put on other layer of dough.

Bake 5 minutes at 425°F; reduce heat to 325°F and bake for 15 minutes.
