TURTLE SOUP | |
1 1/2 quarts strained chicken broth 1 pound turtle meat 3 tablespoons chicken fat 1 medium chopped onion 1 tablespoon parsley 6 thin slices bacon salt and pepper, to taste Prepare rich chicken broth with salt only. Strain. Cut turtle meat in small dice. Brown slowly in chicken fat. Add chopped onion; saute until onion is tender. Add meat, onion, seasonings and any fat to chicken broth. Bring to a boil and simmer for 10 minutes. Serve with parsley sprinkled on each bowlful and a paper-thin slice of lemon floated on top. |
