BOILED FISH SUPREME | |
6 to 8 fish fillets (flounder, sole or other fish) 1/4 c. melted shortening or butter 1/2 c. mayonnaise 2 egg yolks (can use egg substitute) 1 tbsp. chopped parsley 1 tbsp. chopped pimento 1 tsp. chopped onion Dash of cayenne pepper 2 egg whites Brush fish fillets with shortening. Broil lightly for 2 or 3 minutes. Turn, brush other side with shortening and broil on other 2 to 3 minutes. Fillets will puff and brown lightly. Beat mayonnaise (1/2 cup); add 2 egg yolks, beat well. Add parsley, pimento, onion and pepper; mix well. Beat egg whites stiff and gently fold into the mixture. Spread over broiled fish and brown lightly. The sauce mixture will puff up and make a brown cover. Watch carefully. Serves 4 to 6. |
