GLAZED APRICOT-GINGER CHICKEN 
4 to 8 boneless, skinless chicken breast halves
1/4 to 1/2 c. nuts (broken pecans or slivered almonds) - (optional)
2 tbsp. butter
1/2 to 1 whole 10 oz. jar apricot preserves - no sugar added (just fruit preserves)
1-2 tbsp. vinegar
1/4-1/2 tsp. ginger

Omit butter if grilling chicken and mix glaze in flame proof container on other side of grill from chicken. Or cook chicken in butter in skillet on stove until done, then mix glaze in same skillet after removing chicken to a warm platter. Pour glaze over chicken, serve immediately.
