AVOCADO STUFFED WITH SHRIMP
SALAD
 
5 c. water
1 1/2 lb. unpeeled medium shrimp, uncooked
1/4 c. lime or lemon juice
1/2 c. chopped celery
1/2 c. chopped cucumber
1/2 c. mayonnaise
2 tsp. dried whole dill weed
1/2 tsp. salt
1/4 tsp. coarsely ground black pepper
3 lrg ripe avocados
Lettuce leaves

Bring water to boil; add shrimp, and reduce heat. Simmer 3-5 minutes. Drain well, and rinse with cold water; chill. Peel and devein shrimp.

Sprinkle shrimp with 2 tbsp lime juice, stir in celery, cucumber, mayonnaise, dill weed, salt and pepper. Chill at least 1 hour.

Cut avocados in half lengthwise; remove seed, and peel. Gently rub the avocado halves with remaining 2 tbsp. lime juice. Place avocados on lettuce, and fill centers with shrimp mixture.

Note: The shrimp Salad also tastes great on kaiser rolls with or without the sliced avocados.
