HOT CHICKEN SALAD 
1 fryer, cooked and boned
2/3 c. crushed Saltines
1 c. mayonnaise
1 can Cream of Chicken soup
2 c. crushed potato chips
1 1/2 c. diced celery
1 med. onion, grated
4 hard cooked eggs, chopped
2 tbsp. chopped pimento

Cut chicken into chunks. Combine with all other ingredients except for chips. Pour mixture into greased 2 quart casserole. Top with potato chips. Cover and bake at 400 degrees for 15 minutes. Uncover and bake 15 minutes longer. Serves 6 to 8.
