VERMICELLI SALAD 
5 hard cooked eggs, chopped
5 stalks celery, finely chopped
6 gherkin pickles, finely chopped
1/4 c. chopped onions
1 1/2 c. mayonnaise
1/4 c. juice from pickles
Salt & seasoned salt to taste
12 oz. vermicelli, broken, cooked & well drained
1 lb. cooked shrimp, chopped

Combine eggs, celery, pickles, onions, mayonnaise, pickle juice and chill overnight. Just before serving, add shrimp and toss. Garnish with paprika and chopped parsley. Serves 12.
