SALAMI 
5 lbs. hamburger or venison burger
2 1/2 tsp. regular salt
2 1/2 tsp. garlic salt or powder
1/2 tsp. red pepper
1 tsp. liquid smoke
5 tbsp. Quick Tender salt
2 1/2 tsp. mustard seeds or powder
2 tsp. black pepper

Mix in bowl and refrigerate. Knead every day for 4 days. On 5th day, shape into 2 rolls and put on cookie sheet (don't cover). Bake in warm oven, 150 to 200 degrees for 8 to 10 hours or overnight. Slice thin and serve. Will keep 5 weeks in refrigerator. Freezes well.
