FROSTED DAIQUIRI PIE 
1 env. unflavored gelatin
2/3 c. granulated sugar
1/2 tsp. salt
3 egg yolks
1/4 c. cold water
1/2 c. fresh or canned lime juice
1 tsp. grated lime or lemon rind
Green food coloring
1/3 c. light rum
3 egg whites
1/3 c. granulated sugar
1 baked 9" pie shell
Whipped cream

In double boiler top, combine gelatin with 2/3 cup sugar and salt; add egg yolks, water and lime juice; with egg beater beat until blended. Cook over boiling water until mixture coats spoon. Remove from heat; add rind; then tint a pale green with food coloring. Cool mixture. Stir in rum. Refrigerate until slightly thickened, then egg white. Beat egg white until they form a soft peak. Then slowly add 1/2 cup sugar until stiff; fold in mixture. Turn into pie shell. Top with whipped cream. Refrigerate several hours.
