GLAZED STRAWBERRY WHIPPED CREAM
PIE
 
1 qt. strawberries
1/2 c. confectioners sugar
1 c. water
1 1/2 tsp. cornstarch
1/2 to 3/4 c. granulated sugar

After washing strawberries, select 3 cups of the nicer berries. Add 1/2 cup confectioners sugar. Let stand 1 hour to sweeten.

Crush remaining berries (1 cup) and cook with 1 cup of water. Cook abut 2 minutes. Sieve. Then mix 1 1/2 tablespoons cornstarch and 1/2 to 3/4 cup granulated sugar. Stir this mixture into the berry juice and cook until clear and thick. (Keep stirring constantly). Add a little red food coloring.

Bake pie shell and when cool fill it with the fresh sweetened berries and pour the hot sauce over it. Cool. Cover with whipped cream.
