LOBSTER ENCHILADAS 
1 lb. lobster, real or imitation
1 c. chopped broccoli
1/2 c. chopped carrots
4 green onions, chopped
1/2 c. sliced mushrooms
1 sm. can diced green chilies

Mix and fill flour or corn tortillas. 2 to 3 c. shredded Jack cheese or Cheddar or 1/2 of each

Warm tortillas in microwave, 4 at a time, wrapped in paper towels 1 minute. Smear with 1 tablespoon sauce, fill and roll. Place in 9x13 inch or larger casserole. Bottom covered with 1 cup sauce. Put cheese on top and bake covered with foil 30 to 40 minutes at 370 degrees.

Since microwave ovens vary in power, you may need to adjust your cooking time.
