LOBSTER ENCHILADAS | |
1 lb. lobster, real or imitation 1 c. chopped broccoli 1/2 c. chopped carrots 4 green onions, chopped 1/2 c. sliced mushrooms 1 sm. can diced green chilies Mix and fill flour or corn tortillas. 2 to 3 c. shredded Jack cheese or Cheddar or 1/2 of each Warm tortillas in microwave, 4 at a time, wrapped in paper towels 1 minute. Smear with 1 tablespoon sauce, fill and roll. Place in 9x13 inch or larger casserole. Bottom covered with 1 cup sauce. Put cheese on top and bake covered with foil 30 to 40 minutes at 370 degrees. |
