GERMAN POTATO PANCAKES 
6 med. potatoes
2 med. onions
2 eggs
3 tbsp. flour
Salt

Wash and peel potatoes. Peel onions. Grate potatoes into bowl. Grate onions into separate bowl. Pour off excess water from grated potatoes. Add flour, salt, eggs, and onions to potatoes. Blend all ingredients together. Fry pancakes in hot oil in skillet until brown and crisp on both sides. Serve with apple sauce. Serve while hot.
