DOUBLE-CAROB OR "NON-CHOCOLATE" CHOCOLATE COOKIES | |
1/2 c. unsalted butter 1/2 c. honey 1 egg 1/2 c. plain yogurt 1 tsp. pure vanilla extract 2 c. white unbleached flour 1/2 c. unsweetened carob powder 1/2 tsp. baking soda 1/2 c. carob chips Preheat oven to 375 degrees. In a large mixing bowl, beat the butter (soften it first) and honey together until fluffy. Beat in the egg, yogurt, and vanilla. Combine the flour, carob powder, and baking soda and beat the mixture gradually into the creamed mixture. Stir in the carob chips. Drop by teaspoons onto a buttered baking sheet. Bake 8-10 minutes. Cool slightly before removing. Depending on size, yields approximately 4 dozen cookies. |
