COUNTRY SPICE CAKE 
3 c. all-purpose flour
2 c. packed brown sugar
1 1/2 c. plain yogurt
3/4 c. Country Crock (1 1/2 sticks)
1 tbsp. ground cinnamon
1 1/2 tsp. baking powder
1/2 tsp. nutmeg
3/4 tsp. baking soda
1/2 tsp. salt
1/2 tsp. vanilla extract
1/8 tsp. ground ginger
3 eggs

Preheat oven to 350 degrees. Grease and lightly flour 12 cup ring mold or 10 inch tube pan. Measure flour and remaining ingredients into large mixing bowl. With mixer at low speed, beat ingredients just until mixed, frequently scraping bowl with spatula. Increase speed to high, beat 2 minutes, occasionally scraping bowl.

Turn batter into prepared pan. Bake 55-60 minutes or until toothpick inserted in center of cake come out clean. Cool 10 minutes on wire rack. Remove from pan, cool thoroughly on wire rack. Makes 16 servings.
