TURKEY DIVAN 
2 tbsp. butter
2 tbsp. flour
1 1/4 c. milk
1 egg yolk, beaten slightly
1/4 tsp. dry mustard
Generous dash of pepper
1/4 c. grated cheddar cheese
2 (10 oz.) pkgs. frozen broccoli spears
6 (3 oz.) servings cooked turkey
2 tbsp. grated Parmesan cheese

Melt butter; add flour and cook, stirring until mixture bubbles. Remove from heat and gradually blend in milk and egg yolk. Add spices; cook, stirring until mixture thickens. Add cheddar cheese and cook, stirring until cheese is melted.

Arrange hot broccoli and turkey (or ham) in a 12"x8" pan, spreading sauce between layers and on top. Sprinkle with Parmesan cheese. Bake at 350 degrees for 1/2 hour.
