4 lg. Idaho potatoes
1 lg. onion
1 stick butter
8 oz. cheddar cheese

Slice potatoes and onion. Place 1/2 of the potato slices on heavy duty foil. Cover with 1/2 of the onion slices. Salt and pepper. Place remaining potato and onion slices. Salt, pepper and dot with 1/2 to 1 stick of butter.

Seal foil tightly. Bake at 350 degrees for 45 minutes. Remove and cover the potatoes with grated cheese. Seal foil again. Place in the oven for a few more minutes until the cheese is melted. Quick and easy and so delicious!
