BOE JANGO BLACK BEAN SOUP 
2 c. black beans
1/2 c. celery, diced
2 qts. cold water
1 sm. onion
2 tbsp. flour
1 tsp. sea salt
1/8 tsp. pepper
1/4 tsp. dry mustard
2 hard boiled eggs, sliced
1 lemon slices, cut thin
1/2 lb. lean beef or sweet turkey sausages
1 carrot
1 clove garlic

Wash beans, pick over and soak overnight. Drain and add water listed, beef, carrots, onions, celery, seasonings and flour. Cover and cook slowly for 3 hours or until beans become soft. Add eggs. Serves 8 to 10.

Serve also with some hot corn tortillas.
