SWEET POTATO - APPLE PIE 
1/2 c. packed brown sugar
1 tbsp. cornstarch
1 tsp. ground cinnamon
1/4 tsp. salt
1/2 c. water
2 tbsp. butter
4 c. tart apple slices (4 med.), peeled and cored
1 tbsp. lemon juice
1 (9 inch) pastry shell (high sides), unbaked
1 egg, beaten
1 c. cooked sweet potatoes
1/2 c. granulated sugar
1/4 tsp. salt
1/2 tsp. ground ginger
1/8 tsp. ground cloves
1 (5 1/3 oz.) can evaporated milk

In medium saucepan, combine brown sugar, cornstarch, cinnamon, 1/4 teaspoon salt, water, and butter. Cook and stir over medium heat until boiling. Add apples, cover, and cook 5 to 6 minutes (stirring occasionally) until crisp-tender. Remove from heat; add lemon juice. Spread mixture evenly in unbaked pastry shell. Combine egg, sweet potato, granulated sugar, 1/4 teaspoon salt, ginger, and cloves. Blend in evaporated milk. Bake in 375 degree oven for 40 to 45 minutes or until just set. Cool. Serve with whipped cream, if desired.
