PUMPKIN CRUMB CAKE 
1 lg. can pumpkin
3 eggs
1 c. sugar
1 tsp. cinnamon
13 oz. lite cream (Half & Half)
2 cubes butter
1 box yellow cake mix
1 c. walnuts or Macadamia nuts, chopped
Whipped cream (for topping) (optional)

Line a 9 x 13-inch pan with waxed paper. Melt 2 cubes butter. Set aside to cool. Meanwhile, mix pumpkin, eggs, sugar, cinnamon and cream. Mix well. Pour pumpkin mixture into waxed paper-lined pan. Sprinkle or sift yellow cake mix onto pumpkin mixture. Add chopped walnuts or Macadamia nuts. Drizzle with melted butter. Bake for 1 hour at 350 degrees. Cool 10 minutes and turn onto serving tray. Remove waxed paper. Serve with whipped cream, if desired.
