REAL PEANUT BUTTER COOKIES | |
1 c. salted cocktail peanuts 1 c. packed brown sugar 1/2 c. shortening, divided into 4 pieces 1 egg 1/2 tsp. baking soda 1/2 tsp. salt 1/2 tsp. vanilla 1 1/3 c. flour Preheat oven to 350 degrees. Position knife blade in work bowl and add peanuts. Process to a chunky peanut butter stage (about 2 minutes). Add brown sugar, shortening, egg, baking soda, salt, and vanilla. Process to mix (about 20-30 seconds). Add flour and pulse just until mixed (about 8-10 times). If flour has not completely mixed in, remove knife blade and work in with hands. Shape into dough in 1 inch balls. Place on ungreased cookie sheets. Flatten balls with fork, criss-cross fashion, to 1/4 inch. Bake until golden brown, about 10- 12 minutes. Makes 3 1/2 dozen (2 inch) cookies. |
