FRENCH DRESSINGS AND VARIATIONS 
1/4 tsp. salt
Freshly ground pepper
2 tbsp. vinegar
6 tbsp. olive oil

Makes 1/2 cup dressing.

FRENCH DRESSING FOR TOMATOES:

To basic French dressing, add: 1/4 tsp. salt 1/2 tsp. basil

FRENCH DRESSING FOR FISH:

In basic French dressing, substitute lemon juice for vinegar. Add 1/2 teaspoon tarragon.

MIXED HERB SALAD DRESSING FOR MIXED SALAD GREENS:

To basil French dressing, add: 2 shallots, finely chopped 1 tbsp. chopped parsley 1 tbsp. chives
