MEAT SAUSAGE 
25 lbs. ground pork
15 lbs. ground beef
2 cloves garlic
1 1/4 c. salt
2 tbsp. pepper
1/2 c. sugar
1 tsp. salt peter
2 tbsp. sage

Mix all ingredients. Let stand overnight. Fill casings. Smoke.

MEAT SAUSAGE:

25 lbs. pork
15 lbs. beef

Grind beef and pork coarse.

2 grated clove garlic
2 tsp. sage (heaping)
1/2 c. salt (heaping)
4 tbsp. (level) pepper
1/2 c. sugar

Mix and add to meat as you grind it.
