CORN-BRAN MUFFINS | |
1/2 cup bran cereal 1 cup milk 3/4 cup all-purpose flour 1 cup cornmeal 1 tbsp. baking powder 1/4 tsp. baking soda 1/2 tsp. salt 2 large eggs, beaten 1/2 cup vegetable oil 1 tsp. vanilla extract 1/2 cup firmly packed brown sugar Preheat oven to 375°F. Grease 12 muffin pan cups. Stir cereal and milk in large bowl; let stand 10 minutes. In medium bowl, combine flour, cornmeal, baking powder, baking soda and salt. Add eggs, oil and vanilla to milk mixture. Whisk in brown sugar until smooth. Add dry ingredients. Spoon batter into prepared cups. Bake at 375°F for 20 minutes or until toothpick inserted in center of muffin comes out clean. Makes 1 dozen. Submitted by: Donna Hudson |
