QUICHE 
2 tbsp. butter
1 med. onion, chopped
1 clove garlic, minced
8 oz. Swiss or Cheddar cheese, grated
6 oz.. fresh mushrooms or sliced broccoli
1 frozen pie shell
3 eggs
1/2 c. light cream
1 c. milk
1 tsp. prepared mustard
Dash of white pepper and salt
Optional addition of ham, diced

In a skillet, melt butter and add onion, garlic, and mushrooms. Cook until onion is transparent, then place in frozen pie shell with cheese. Combine the rest of ingredients, and beat lightly. Pour into crust over cheese mixture. Bake in 450 degree oven for 15 minutes or until knife inserted 1 inch from edge of quiche comes out clean.
