Rub a shallow 2 quart baking dish with clove of garlic (optional). Spread dish with 1 tablespoon butter. Spread with 1 package (10 ounces) frozen leaf spinach (thawed). Cover with 1 pound frozen flounder, thawed and separated. Season lightly with salt and pepper and 2 teaspoons lemon juice. Add 1 small onion very thinly sliced and separated into rings.
Spread 1 (10 3/4 ounce) can condensed Cheddar cheese soup on top. Arrange 1 large sliced tomato on top and sprinkle with dried crushed oregano leaves to taste. Bake in a 350 degree oven about 35 minutes. Makes 4 servings.
