CHICKEN AND RICE CASSEROLE 
1 c. raw rice
1 c. water
2 1/2 - 3 lbs. chicken pieces
1 can cream of chicken soup or mixed
1 can cream of mushroom soup
1/4 onion, chopped (or 1 tsp. dried onion flakes)
1/2 tsp. salt
1/4 tsp. pepper
6 tbsp. butter, melted

Grease 9x13 pan. Put rice on bottom (leave 1/2 around sides). Mix all the other ingredients except chicken pieces. Pour 1/2 of this mixture over rice. Lay chicken pieces (skin side up) on top of this. Cover chicken pieces with rest of soup mixture. Sprinkle with paprika and bake at 275 degrees for 3 hours. Chicken will be very tender. Some of the rice will be crunchy.
