BAKED CHICKEN AND RICE 
3 lb. chicken
1/4 c. flour
1 tsp. salt
1/4 tsp. pepper
1/4 c. butter
3 chicken bouillon cubes
1 tsp. instant minced onion
1 c. uncooked regular rice

Shake first 3 ingredients in plastic bag. Melt butter in shallow 2 quart baking dish in oven, 400 degrees. Put chicken skin side down in dish and bake 20 minutes. Remove chicken and put 2 cups boiling water in dish with remaining ingredients. Mix well and arrange chicken, skin side up. Put back in oven and bake for 40 minutes.
