Saute onion, eggplant, and tomatoes to make a slight gravy. Add squash, pepper, and spices. Cover pan and simmer slowly for about 1/2 hour.

Cook enough yellow squash and onion to yield about ... until set and golden brown (about an hour). Top with grated cheese and allow cheese to melt.
