GOOD RICE CASSEROLE | |
1 1/2 lbs. sausage or ground meat 1 med. onion, chopped 1 bell pepper, chopped 1 can cream of mushroom soup 1 can whole kernel corn, drained 1 c. Ro-tel tomatoes 1 sm. can mushrooms, sliced 1 c. Cheddar cheese, grated 2 c. extra long rice 1 tbsp. butter 1 tsp. salt Saute meat or sausage, chopped onion and bell pepper. Add soup, corn, tomatoes and mushrooms. Simmer 50 minutes. While simmering, bring 2 cups water, salt and butter to a boil in 2 quart saucepan. Add 1 cup rice. Cover pan and cook until done. Combine cooked rice with meat and vegetable combination in a greased casserole dish. Top with grated cheese. Bake at 325 degrees for 30 minutes or until cheese melts and is slightly browned. |
