ROLLED SUGAR COOKIES 
1/3 c. soft shortening
1/3 c. brown sugar, packed
1 egg
2/3 c. molasses
2 3/4 c. sifted flour
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 tsp. ginger

LIGHT DOUGH:

1/3 c. soft shortening
1/3 c. sugar
1 egg
2/3 c. honey
2 3/4 c. sifted flour
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla

Mix together thoroughly shortening, sugar, egg and molasses or honey. Sift together and stir in dry ingredients. (For light dough, add vanilla.) Chill dough.

Roll out 1/4 inch thick. Cut into desired shapes. Place 1 inch apart on highly greased baking sheet. Bake until, when touched, no imprint remains. Ice and decorate when cool. Bake at 375 degrees for 8-10 minutes. Makes 5 dozen 2 1/2 inch cookies.
