SICILIAN ORANGE SALAD 
6 seedless oranges
6 tbsp. olive oil
1/2 tsp. salt
24 black olives
Juice of 1/2 lemon

Peel oranges, removing as much of white inner peel as possible. Slice into thin rounds. Spread out on a large plate. Sprinkle with olive oil, salt and lemon juice. Distribute olives over orange slices. Press orange slices gently. Baste with juices. Chill and serve. Serves 4.
