SHRIMP SCAMPI 
1 lb. uncooked shrimp, peeled and de-veined
1/4 lb. (1 stick) butter
1/4 c. chopped parsley
1/4 c. chopped onion
1 tbsp. minced garlic
1 tbsp. lemon juice
Salt and cayenne pepper to taste

Over medium high heat, melt butter. Add parsley and onions and saute onions until tender. Add lemon juice and garlic and stir. Continue to saute another 5 minutes. Add shrimp, salt, pepper and stir to mix well. Saute until shrimp are opaque and turn pinkish. About 5 minutes; do not overcook. Yield: 2-4 servings.
