CORNED BEEF AND CABBAGE
CASSEROLE
 
2 c. mashed potatoes
1/4 c. chopped parsley
2 c. finely chopped cabbage
1 1/2 c. finely chopped corned beef (CAN - corn beef)
1 c. (4 oz.) Velveeta shredded cheese
1/2 c. shredded carrot
1/4 c. chopped onion

Microwave. Mix together potatoes and parsley; spoon into 2 quart casserole dish. Mix together remaining ingredients; spoon over potatoes. Microwave on High 8 to 12 minutes or until thoroughly heated. Let stand 5 minutes before serving. Makes 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
