ITALIAN BREAD WITH MUSHROOM DIP 
2 tbsp. olive oil
2 tbsp. butter
2 sm. yellow onions, chopped
2 green onions, chopped
16 oz. mushrooms, sliced
1/2 c. Gorgonzola cheese, crumbled
Red pepper flakes to taste (opt.)
1 lg. round Italian bread, unsliced

Quickly brown onions in oil and butter. Add mushrooms and cook just until tender. Lower heat. Add cheese and cook until dissolved. Scoop out bread and reserve.

Toast shell in 350 degree oven until crispy. Fill bread shell with mixture and serve warm with reserved bread pieces. Have extra bread on hand for dipping.
