HAM AND CHEESE MUFFINS 
2 c. Bisquick baking mix
2/3 c. milk
1 tbsp. vegetable oil
1 egg
1/2 c. finely chopped fully cooked smoked ham
1/2 c. shredded hot pepper
Cheddar or Swiss cheese (4 oz.)
2 tsp. snipped fresh or freeze fried chives

Grease bottoms only of 8 large muffin cups, 3 inches by 1 1/2 inches, or 12 medium muffin cups, 2 1/2 inch by 1 1/4 inches or line with paper baking cups.

Mix baking mix, milk, oil, and egg with fork. Beat vigorously 30 strokes. Stir in remaining ingredients. Divide batter evenly among cups. Bake at 400 degrees until golden brown, about 15 minutes. Makes 8 large or 12 medium muffins.
